Healthy After School Snack: Fruit Kabobs on Pretzel Stick Skewers


Need a healthy after school snack that doesn’t take much time to prepare, doesn’t break the bank—and appeals to the kids?  Try these Quick Fruit Kabobs on Pretzel Stick Skewers with Greek Yogurt Dip.  They use fresh, seasonal fruit (lower cost) on inexpensive pretzel sticks.  No wood skewers.  No excess packaging. 

Not only am I seeking quick and healthy after school snacks this year—but, snacks for during the school day as well.  My 4th grader has a lunch break so late in the day that her teachers are allowing the students to pack a healthy mid-morning snack.  I am not a fan of processed snacks for the girls—too many bad things in even many of the “healthy snacks”—and our budget simply doesn’t have the wiggle room for convenience organic and all-natural, commercial snacks every day.  I really need to plan ahead and prepare fresh, healthy, portable snacks that my daughter, the pickiest of picky, will actually eat. 

That will be a piece of cake right?  Yeah, I know.  These Quick Fruit Kabobs on Pretzel Stick Skewers with Greek Yogurt Dip are in her lunchbox for today’s snack.  

Ingredients for Quick Fruit Kabobs on Pretzel Stick Skewers with Greek Yogurt Dip
Fresh Fruit
Mini Pretzel Sticks

1 c. Traditional Style, Plain Greek Yogurt
1/4-1 tsp. Stevia in the Raw or similar, natural sweetener

Instructions for Quick Fruit Kabobs on Pretzel Stick Skewers with Greek Yogurt Dip
Make the Greek Yogurt Dip for the fruit.  Add a cup of the Greek yogurt to a small mixing bowl.  Stir in the desired amount of sweetener.  I use only 1/4 tsp. since the girls love Greek yogurt—but, adjust the sweetness to your taste.  I also find Stevia to be extremely sweet—so start with lesser amounts and taste as you go since you can always add more along the way! 

Choose and clean the fruit.  I use whatever fruit is in season or reasonably priced on a given week.  This week, I used strawberries and blueberries.  Last week, we had a combination of grapes, strawberries, bananas, melon, and raspberries.  I’ve even use cherries pitted down the center to leave the outer cherry intact.  Pick favorites—but, make sure that they are fresh and in season so that they are sweeter and that the texture is firm enough to hold up to skewers.

Skewer the fruit onto mini pretzel sticks.  I skewer a few pretzel stick fruit kabobs—then I simply add the fresh fruit pieces and extra sticks to the plate or lunch box so that the kids can create their own fruit kabob combinations.

Serve.  When serving in lunches or as take-along snacks, I add ¼ c. of the Greek yogurt dip to a small storage container with a lid and send it along with the fruit and pretzel skewers.  Keep it cold until ready to eatI try to keep the pretzels separate from the fruit to avoid them becoming stale in the hours before lunch time--but, the kids enjoy making their own kebabs during lunch or snack.  .
