What is for lunch?  Like so many busy people, lunchtime turns into rush time--and boring, repetition.  It’s no wonder that lunch is not always the most anticipated meal of the day!  How can you serve and enjoy something different and delicious for lunch while taking advantage of the convenience of heat and eat style meals?  I discovered the Make It Your Michelina’s recipe ideas from Michelinas.com--and I wanted to share a few fun, quick, and easy ideas to help you create something new for lunch today--even on a time crunched, budget!

Lettuce Wraps

This quick recipe simply uses the Michelina’s Chicken Fried Rice, iceberg lettuce leaves and Asian sauces to create a convenient lunch with a healthier twist.

Chicken Parmesan Bites

These cute recipe creations combine two Michelina’s entrees--the Michelina’s Pop’n Chicken and Michelina’s Spaghetti Marinara.  This is one that I think the kids would love to both make and eat!

Seafood Alfredo

I LOVE seafood and white sauce.  This recipe uses prepared Michelina’s Fettucine Alfredo along with shrimp and fresh asparagus.   I could envision subbing in scallops and broccoli as well--without creating a kitchen full of dirty pots at lunch time!

Taco Bowls

I think this recipe is a great idea for lunch--or as a fun, after school snack or a tailgating buffet.  Bite sized, tortilla chip scoops combine with Michelina’s Lean Gourmet®  Santa Fe Rice and Beans and a few extra toppings to create something fresh and different.

Stuffed Peppers

My husband loves stuffed peppers--but, the rest of the family does not.  My homemade recipe, even cut down, makes too much filling for just a couple of servings, so I rarely make them.  This recipe stuffs the peppers with Michelina’s Sweet and Sour Chicken and rice entrée.  It’s downsized, convenient, and fast.
