Meatless Monday: Italian Veggie Wrap Recipe

Who says Meatless Monday meals need to be time consuming? It's been a while since I've posted a Meatless Monday recipe--so, I thought I would share one of my favorite, quick, meatless lunch ideas.  This Italian veggie wrap is ready in minutes and can be customized to use the veggies that you prefer--or the leftovers that you have on hand.

Ingredients for an Italian Veggie Wrap

  • 1 Whole Grain Tortilla, burrito size
  • 1 Handful of Spinach, Arugula or favorite Greens
  • 1/4 c. Tomatoes, chopped
  • 1 Chopped Green Onion, with tops
  • 5-6 Slices of Cucumber
  • 3-4 Black Olives, Sliced
  • 3-4 Banana Pepper Rings
  • 1/4 c. Shredded Part Skim Mozzarella Cheese or a vegan cheese alternative
  • 1-2 Tbsp. Italian Mayo (Mix 1/4 c. Light Mayonnaise with 1 Tbsp. Light Italian Salad Dressing)
  • Salt and Pepper to taste

Instructions for an Italian Veggie Wrap

Layer ingredients onto a warmed tortilla and top with Italian mayo.  Add salt and/or pepper to taste and fold over like a soft taco.

That’s it--a quick, easy and healthy lunch in less than ten minutes.   

This is a great way to raid the refrigerator leftovers and use odds and ends of veggies that may otherwise go to waste.  I am a big fan of versatile recipes that use up the little bits of randomness that quickly accumulate in my fridge!  Pick and choose the vegetables that you want--and even sub in Provolone cheese or an Italian cheese blend instead of Mozzarella.

Sometimes these wraps gain a little grilled turkey or chicken and become frequent lunches all week long--and during weekend outings too--not just on Meatless Mondays!
