Ingredients for an easy Balsamic Roast Beef and Vegetables
Recipe in the slow cooker
3-5 Pounds Beef Roast (I usually use a shoulder roast for
this recipe since it has lots of help becoming tender!)
1 Large Vidalia Onion, peeled and sliced
1 Lb. Baby Carrots or Whole Carrots, cleaned and cut into 3
inch sticks
2 Celery Stalks, with leaves, cut into 1 inch pieces
4 Medium White Potatoes, peeled and quartered
1 tsp. Thyme, ground
1 tsp. Garlic Powder
1 Bay Leaf
1/8 tsp. Ground Black Pepper
½ tsp. Salt
¼ c. Balsamic
Vinegar
¾ c. Water or
Vegetable Broth

Prepare slow cooker.
Spray the cooker with a nonstick cooking spray or line with a
disposable, slow cooker liner. Turn the
slow cooker on high while you gather the ingredients. Turn the slow cooker down to low. Place the onion slices into the bottom of the
slow cooker--leaving a few to add to the top of the roast.
Season the meat. Rub
the spices into both sides of the roast beef.
Place the roast into the center of the slow cooker.
Add the vegetables to the slow cooker.
Arrange the remaining vegetables around the beef roast.
Pour in the liquid.
Add the vinegar and water by pouring around the edges of the slow
cooker—mostly over the vegetables.
Cover, cook and serve the beef roast. Cook
on low for 6-8 hours. Remove the bay
leaf. Slice the beef as desired and serve warm with vegetables, bread
and a salad.
