Breakfast Burrito Recipe with Sausage

What's for breakfast, mom? Our mornings are busy--even our weekend mornings.  Either I'm up hours before everyone else to cook something for breakfast--or the girls slip into a cold cereal funk. This quick and easy breakfast burrito recipe with sausage is filling enough for a weekend breakfast--and simple enough for a take-and-go, rushed, weekday breakfast.  The teen daughter especially likes breakfast burritos since she can wrap it up in foil and have breakfast on the way to school.

Ingredients for a Breakfast Burrito Recipe with Sausage

1/2 lb. Pork or Turkey Sausage, regular flavor
2 1/2 c. Chopped Green, Yellow, & Red Peppers & Yellow Onions or a frozen Pepper & Onion Blend
8 Eggs, Lightly Beaten
1/8 tsp. Mrs. Dash Extra Spicy Seasoning Blend
1/2 c. Shredded Sharp Cheddar Cheese (I use a blend of Vermont White Cheddar and other Sharp Cheddar Cheeses)
4 Large Flour Tortillas, warmed
Topping Ideas:  Diced tomatoes, jalapenos, taco sauce or sour cream (Optional--we generally skip the toppings!)

Instructions for Breakfast Burrito Recipe with Sausage

Brown the Sausage.  In a large skillet, crumble the sausage and fry over medium heat until browned and cooked through.  If there is more than a couple of teaspoons of sausage drippings, drain them away to leave just a little fat (about 2 tsp.) in the skillet.

Saute the Vegetables.  Add the vegetables directly to the sausage and cook until the vegetables are tender.

Scramble in the Eggs.  Add the eggs directly to the sausage and vegetable mixture.  Scramble and stir until the eggs are set.  Sprinkle the shredded cheese over the eggs and remove from heat.

Prepare the breakfast burritos.  Divide the egg mixture into four equal portions.  Place the egg onto the center of the tortillas and wrap burrito style.  We typically split one large burrito in half to make two servings.
