Spicy Sriracha Chex Snack Mix Recipe

When I was growing up, my Grandma always made huge batches of traditional, Chex Party Mix for her sons' families at Christmas.  We never had "party mix" at any other time of the year--so these bowls of snacks were always highly welcomed.  Oddly enough, for years, I still only made the original, Chex party mix over the holidays.  (I'm not sure why--that's just the "way it is"..I guess?)  Last year, my youngest daughter wanted to make a spicy, Sriracha style Chex snack mix.  She is a lot like me; she simply cannot leave a recipe alone.  There is always something new to try!  Our Spicy Sriracha Chex Snack Mix was such a hit over the holidays--that it made frequent appearances at Super Bowl parties, birthday parties, summer barbecues and more. Ingredients for Spicy Sriracha Chex Snack Mix
1/4 c. Butter, Melted
1 tsp. Sesame Oil, (I use Kadoya Sesame Oil)
2 Tbsp. Soy Sauce
1/4 c. Sriracha Sauce, (I use Huy Fong Sriracha Sauce)
1 tsp. Ground Ginger

2 c. Rice Chex Cereal
2 c. Wheat Chex Cereal
2 c. Corn Chex Cereal
1 c. Wasabi Peas (I use Hapi Snacks Wasabi Peas)
1 c. Chow Mein Noodles
1/2 c. Peanuts
1/2 c. Cashews
1/2 c. Chopped Almonds or Chopped Walnuts
1 c. Pretzels

Instructions for Spicy Sriracha Chex Snack Mix
Preheat Oven and Prepare Roasting Pan.  I use the good, old, Granite Ware Roasting Pan that I use for turkeys and ham.   Spray the bottom and sides of the roasting pan with cooking spray.  Preheat the oven to 250F.

Combine the Butter, Oil & Spices.  In a small mixing bowl, combine the butter, sesame oil, sriracha sauce, garlic powder, and ground ginger.  Set aside.

Mix the Snack Mix Base Ingredients.  Add the cereals, Wasabi Peas, Chow Mein noodles, nuts, and pretzels directly to the roasting pan and give a stir to mix the snack ingredients well.

Add the Sriracha Chex Snack Mix Seasonings and Bake.  Pour the butter-spice mixture over the snack mix base in the roasting pan.  Toss thoroughly to coat the cereal mixture with the butter & spices.   Bake the snack mix for 60 minutes--stirring the mixture every 15 minutes during baking.

Cool, Store & Serve.   Turn the snack mix out onto a large flat surface covered with paper towels or parchment paper.  Allow the Spicy Sriracha Chex Snack Mix to cool completely.  Store in airtight containers--or serve immediately after cooling.
