Need to Use Up Bananas: Banana Spice Bread Recipe

I bought a massive bunch of bananas before a recent trip—with the intention of taking a bunch of bananas along for snacking on the road. Of course, while I remembered to pack everything else in the house—I forgot the bananas.

Oh, well. When life leaves you 5 pounds of bananas—make some banana bread!  My banana bread recipe is a combination of years of quick bread recipes. The girls and I like to eat it plain or in French Toast—while my husband spreads it with a bit of cream cheese.

Ingredients for Banana Spice Bread
 1 c. whole wheat flour
1 c. all purpose flour
¼ tsp. salt
¼ tsp ginger
1/8 tsp. nutmeg
1 tsp. cinnamon
1 tsp. baking soda
3 bananas, smashed
1 ¾ c. white sugar
1 tsp. vanilla extract
1/3 c. softened butter or margarine
¼ c. unsweetened applesauce
¼ cup milk
½ c. walnuts, chopped (optional)
½ c. semi-sweet chocolate chips (optional)

Instructions for Banana Spice Bread:

Preheat oven and prepare bread pan. Preheat oven to 350 F. Lightly grease a nonstick standard bread pan or spray with non-stick cooking spray.

Mix the dry ingredients. Into a large mixing bowl, add the flours, salt, spices, and baking soda. Stir with a fork until well combined.

Mix the wet ingredients. Add the butter or margine to a medium mixing bowl. With an electric hand mixer, beat in the sugar until combined. Add the eggs and beat again until mixed thoroughly. Stir in the vanilla extract, milk, and applesauce.

Combine the wet and dry ingredients. Pour the wet mixture into the dry ingredients and stir until moistened. Fold in the nuts and chocolate chips if using them.

Bake the banana bread and serve. Pour the prepared banana bread batter into the bread pan and bake 50-60 minutes or until knife inserted into the center comes out clean. The knife may pick up gooey banana when testing for doneness—but, should not have obvious uncooked batter! Allow to cool slightly. Run a knife around the edges of the bread pan and invert the loaf onto a plate or cutting board.

Slice with a bread knife and serve warm or cold.
