Recipe for Buffalo Chicken Flatbread Pizzas

I love buffalo chicken wings--actually any form of buffalo style chicken. We decided to re-create the flavors from one of our favorite buffalo chicken sandwiches in a healthier flatbread pizza. Whole grain flat bread, little butter, no breading on the chicken and no deep frying on these pizzas--just lots of buffalo chicken flavor.  It seems like there are several ingredients--but, really, this recipe is very quick and easy to prepare.  These taste so much like restaurant created, deep fried, fat-filled buffalo chicken sandwiches that you will never know that you've cut away so much of the fat and the calories. We make these for dinner--but, I would also love to serve these for parties too. 

Ingredients for Buffalo Chicken Flatbread Pizzas 
Chicken
2 large boneless, skinless chicken breasts, sliced into strips
1/2 tsp. Garlic Powder
1 Tbsp. Parmesan Cheese

Buffalo Pizza Sauce Mixture
3/4 c. Frank's Buffalo Wing Sauce (not hot sauce--the thicker wing sauce)
1 tsp. Garlic Powder
2 Tbsp. Parmesan Cheese
1/2 c. Blue Cheese Salad Dressing

Flatbread Pizza Crusts
2 Tbsp. Melted Butter
4 Whole Grain Flatbread Rounds

Buffalo Chicken Pizza Toppings
1 c. Chopped Tomatoes
1/2 c. Chopped Red Onion
1/2 c. Lettuce, shredded
3/4 c. Shredded Cheddar Cheese
4 Tbsp. Blue Cheese Crumbles

Blue Cheese or Ranch Salad Dressing for drizzling or dipping

Instructions for Buffalo Chicken Flatbread Pizzas
Preheat Oven and Prepare a Pizza Pan.  Preheat oven and line a cookie sheet with aluminum foil, lightly sprayed with Olive Oil Cooking Spray.

Cook the Chicken. I use the broiler during cold weather months and the outdoor grill during summer. Season both sides of the chicken with the garlic powder and Parmesan Cheese. Broil or Grill until chicken is cooked through and juices run clear. Set aside.

Mix up the Buffalo Sauce. In a small mixing bowl, combine the wing sauce, the garlic powder, Parmesan Cheese, and the blue cheese salad dressing. Mix until well blended. Pour 1/4 c. of the wing sauce over the cooked chicken, turning to coat.

Prepare the flatbread. Brush each flatbread round lightly with melted butter. Spread 1/4 c. of the Buffalo wing sauce mixture onto each of the rounds--leaving about 1/2 inch around the edges of each round.

Top the Buffalo Chicken Flatbread Pizzas. Top each pizza with 1/4 of the tomatoes, red onions, lettuce, chicken, cheddar cheese, and bleu cheese crumbles.


 Bake and Serve. Bake the buffalo chicken flatbread pizzas for about 10 minutes or until cheddar cheese has melted. Drizzle with remaining Buffalo sauce mixture if desired. Serve drizzled with Blue Cheese or Ranch salad dressing.
