Easy Meatless Monday Lunch: Veggie Mediterranean Flatbread Recipe

My middle daughter loves flatbreads and generally finds a way to use a couple of them every week for quick and easy lunches.  This morning, she decided to use up a handful of random vegetables, some hummus and her favorite Feta cheese to make her latest meatless, flatbread creation.  Here is her recipe for a Veggie Mediterranean Flatbread.  It is quick, easy, healthy and loaded with flavor--and only takes about 10 minutes to make for a quick and easy lunch.

Ingredients for a Veggie Mediterranean Flatbread

1/4 c. Sliced and Chopped Red Bell Pepper
2 Tbsp. Red Onion
1 tbsp. Black or Green Olives, Sliced
1/4 c. Chopped Mushrooms
1/4 c. Feta Cheese
1/4 c. Shredded Mozzarella or a Slice of Provolone Cheese, torn into pieces

Instructions for a Veggie Mediterranean Flatbread

Preheat Oven.  Preheat oven to 350.  Line a cookie sheet or pizza pan with parchment paper or aluminum foil.

Prepare the Flatbread.  Spread the hummus evenly over the surface of the flatbread and top with the vegetables and cheeses. 

Bake, Slice and Serve.  Bake for about 6-7 minutes or until the cheese melts and the bread warms.  Slice into four slices and serve warm.
