Ingredients for Broccoli Cheese Soup 

  • 1/4 cup Butter
  • 1 Medium Yellow Onion, chopped 
  • 1 Clove Garlic, minced
  • 1/4 cup All-Purpose Flour
  • 2 cups  Milk
  • 2 cups Chicken Broth
  • 3 cups Broccoli Florets, chopped into bite-sized pieces
  • 1 cup shredded Carrots
  • 1/2 teaspoon Paprika
  • 1/8 teaspoon ground Nutmeg
  • Dash of Cayenne Pepper 
  • 3 c. Sharp Cheddar Cheese, Shredded plus a bit for garnish if desired
  • Salt and Pepper (About 1/2 - 1 teaspoon Salt and 1/8 teaspoon Black Pepper)

How to Make Broccoli Cheddar Soup

Step 1. Make the Soup Base

Melt the butter in a heavy stock pot or dutch oven over medium heat.  Add the chopped onion and saute until softened.  Sprinkle the flour over the onions and stir to coat.  Add the garlic and cook for an additional 1-2 minutes, stirring constantly.

Step 2. Whisk in the Liquid 

Slowly add the milk and chicken broth to the flour mixture, whisking fairly vigorously to break up any flour clumps.  Stir until smooth and fully combined.  

Step 3. Add the Veggies 

Add in the shredded carrots and broccoli.  Bring to a slight boil, then reduce heat to low and simmer for about 25-30 minutes, or until the vegetables are tender.

Step 4. Blend (Optional)

For a creamier texture, transfer 2 cups of soup to a blender and pulse until smooth. Return it to the pot and stir. You can also blend all of the soup or leave it chunky. I prefer fewer big bits of broccoli--but, it is totally your call.

Step 5. Add Cheese & Seasonings.  

Return the soup to low heat. Stir in the paprika, cayenne pepper, salt, pepper, and the shredded cheese.  Stir until the cheese is all mixed in and fully melted.  Remove from heat and stir in nutmeg, if desired.

Ladle into cozy crock style soup bowls with handles, sprinkle with a little extra cheese, and serve warm with naan or crusty bread brushed with garlic butter. This soup reheats beautifully and takes even better the next day!
