Easter and Holiday Leftover Ideas: Ham Salad Recipe

Are you wondering what to do with all of those leftovers from your holiday dinner?  Ham salad is one of my favorite ways to use up random pieces of Easter or holiday leftovers.  I am able to toss in everything from sweet gherkin pickles and celery to chunks of the Easter Ham and hard boiled eggs.  This ham salad recipe primarily uses leftovers with a little mayonnaise and spicy mustard to create a new and different leftover lunch item that does not really seem like leftovers.


Ingredients for Ham Salad
3 1/2  c. Ham, cooked and cubed into bite sized pieces--and ground in a food processor or meat grinder
2 Boiled Eggs, peeled, rinsed and finely diced
1/2 c. Celery, finely diced
1 1/2 Tbsp. Sweet Pickle Relish
OR
4 diced Sweet Gherkin Pickles & 1 Tbsp. Sweet Gherkin Pickle Juice from the jar
3 Tbsp.  Mayonnaise ( I use Kraft Regular Mayo but Light works well too)
1-2 tsp. Spicy Brown Mustard or Dijon Mustard

Bread or Salad Greens for serving
Topping Suggestions:  Lettuce, tomato, yellow onion

Instructions for Ham Salad from holiday leftovers
Mix all ingredients completely and serve either on salad greens or on bread as a sandwich.  We often use leftover dinner rolls or crescent rolls to make mini ham salad sandwiches topped with lettuce, tomato and onion.

Note:  I also mix some of the ham salad without the mustard as our younger daughters refuse the smell or taste of mustard in any form—so it’s certainly an optional ingredient and the recipe tastes fine without it.
