Slow Cooker Spicy Chicken Sandwich Recipe Idea

I use my slow cooker, or Crockpot, at least once a week. Sometimes I use it to help me prepare a full meal on a night when I cannot be in the kitchen—and sometimes I use it to cook a large quantity of meat that can be used for a variety of recipes throughout the week. This spicy chicken recipe is one that I make often for summer picnic sandwiches or wraps—then repurpose for other weeknight meals with additional ingredients for everything from buffalo chicken dip to burritos, enchiladas and nachos to chicken stuffed jalapeno poppers.
Ingredients for Slow Cooker Spicy Chicken and Spicy Chicken Sandwiches

4-6 Boneless, Skinless Chicken Breast Halves

2 Tbsp. Mrs. Dash Extra Spicy Seasoning Blend

1 Medium Yellow Onion, Diced

1 c. Vegetable Broth

Extra Ingredients for Slow Cooker Spicy Chicken Sandwiches
Buns or Tortilla Wraps

Favorite sandwich toppings: Lettuce, Tomato, Red Onion, Pickles

Mayonnaise or Ranch Salad Dressing

Mexican Blend Shredded Cheese or Sliced Cheddar Cheese, optional


Instructions for Slow Cooker or Crockpot Spicy Chicken Sandwiches

Place diced onions and vegetable broth into the bottom of a large capacity slow cooker.

Place chicken breasts, meaty side up, on top of the onions and broth. Sprinkle Mrs. Dash Extra Spicy Seasoning Blend evenly over chicken breasts to coat them.

Cook chicken on low for 6-8 hours, or until chicken breasts are cooked through and are easily broken apart with a fork.

Break spicy chicken into bite sized chunks or pull apart with a fork as in pulled pork.

Layer meat and desired toppings onto a toasted bun or warmed tortilla wrap.

Recipe Notes:  We'll add our other recipes using this spicy chicken as we post them.  Don't forget that the chicken breasts can be cooked for a shorter length of time in the slow cooker and eaten as a regular meat dish with sides rather than as a "pulled" or chunked meat ingredient for other dishes.
