Crunchy, Fresh Broccoli Salad Recipe with Fruit and Nuts

Fresh broccoli salad is probably one of my favorite, creamy, summertime veggie salads.

I prefer crunchy, raw broccoli to its cooked alternative any day!

The flavors and ingredients in this salad suit the whole family—and can be easily adapted to suit your own as well.


We frequently serve this as our main side dish to accompany spicy, grilled chicken or fish.

Ingredients for Crunchy, Fresh Broccoli Salad with Fruit and Nuts


The Broccoli Salad Fruits, Veggies and Nuts:

4 c. Chopped Fresh Broccoli, in bite sized pieces

1 c. Chopped Carrots

¼ c. Finely Chopped Yellow or Green Onion

1/3 c. Raisins or Dried Cranberries

2 Tbsp. Bacon Bits

¼ c. Chopped or Slivered Almonds, Pecans or Walnuts


The Broccoli Salad Dressing:

1 c. Light Mayonnaise

1 Tbsp. Apple Cider Vinegar

2 Tbsp. Milk

2 tsp. Sugar or Equivalent Sugar Substitute


Instructions for Crunchy, Fresh Broccoli Salad with Fruit and Nuts

Build the Broccoli Salad Base. In a large mixing bowl, combine the chopped broccoli, the carrots, the onions, dried raisins, bacon bits, and nuts. Toss to mix the ingredients.

Prepare the Broccoli Salad Dressing. In a small mixing bowl, whisk together the mayonnaise, vinegar, milk and sweetener until well blended.

Combine the Dressing and the Salad Ingredients. Pour the dressing over the broccoli combination and toss to coat.

Serve the Broccoli Salad. Once the broccoli salad is tossed, I transfer it to a serving bowl. I tend to make a mess of the mixing bowl as I toss the salad—and prefer the neat, finished look of the clean serving dish.
