Quick & Easy Tuna Cake Recipe

My youngest daughter has developed a tuna cake addiction over the past few weeks! She has been making her own lunch nearly every day--and tuna cakes, in some variation, have been the main course most of the time! She has finally perfected her go-to recipe and they really do taste as good as they look! What is our favorite, quick and easy recipe for tuna cakes?

Ingredients for Quick & Easy Tuna Cakes 

6 oz Tuna (Canned & Drained or grilled and flaked)
1 Large Egg, lightly beaten
2 Tbsp. Oat Flour (or Bread Crumbs)
2 tsp. Dijon Mustard
1 tsp. Dried Parsley Flakes
Salt & Pepper to Taste
1 Tbsp. Olive Oil

Instructions for Quick & Easy Tuna Cakes

Mix the Tuna Cakes.  In a medium-sized mixing bowl--combine the tuna, egg, oat flour, mustard, parsley, and a dash of salt and pepper.  Mix completely.  If the tuna mixture cannot be handled and formed into a solid patty--add a little more oat flour or bread crumbs until it holds together while handling.  We generally form this mixture into 3 small cakes for frying.
 
Heat Oil in Small Skillet.  My daughter insists on using this Ozeri  Frying Pan for almost everything she cooks.  She loves it for everything from eggs to these tuna cakes.  Simply heat the frying pan and oil until hot--but, not smoking. 

Fry the Tuna Cakes and Serve.  Fry the tuna cake for 3-5 minutes per side until golden brown.  My daughter serves with a side of mayonnaise or tartar sauce.
