Cooking with Kids: Triple Chocolate Fudge Oreo Cupcake Recipe


There are times when a traditional, sliced birthday cake will just not do—you need a birthday cake alternative.  Sometimes there is a perfect cake for a theme—and sometimes there isn’t.  Sometimes there isn’t even a party theme—making decorating a fun birthday party cake even more of a challenge.  This triple chocolate fudge Oreo cupcake recipe is quick and easy to both make and to decorate, works well for boys and girls (even older ones!) and looks like you spent hours on it.

When I first considered making an Oreo cupcake for my daughter’s classroom birthday party—I found a great Oreo cupcake recipe atAnnie’s Eats.  I almost always make homemade cakes and cupcakes--but, I needed at least 40 cupcakes for both classroom party and for her birthday sleepover and decided to make a few substitutions for time’s sake!  I also thought that my daughter would like a double (or triple!) chocolate cupcake better—and I worried that the crispy cookie in the bottom of the cupcake would be too messy for the classroom.  I made a few changes and here is our version of Triple Chocolate Fudge Oreo Cupcake Recipe.

Ingredients for Triple Chocolate Fudge Oreo Cupcakes:
1 Box of Betty Crocker Triple Chocolate Fudge Cake Mix (add eggs, water and oil per pkg. instructions)
2 c. Crushed Oreo Cookies (about 20-25)

1 can Pillsbury White Frosting
2 Tbsp. Oreo Cookie Crumbs
24 Mini Oreo Cookies

Instructions for Triple Chocolate Fudge Oreo Cupcakes
Mix and bake the Oreo cupcakes.  Preheat the oven according to cake mix package directions.  Blend together the cupcake ingredients, folding in the Oreo pieces until combined.  Scoop the Oreo loaded cupcake batter into prepared cupcake liners.  I used Reynolds Stay Brite Baking Cups.  They were wonderful!  They are nonstick and the outer colors really do remain clear and bright after baking.  I was able to make 24 cupcakes from this recipe—filling each cupcake a little over 2/3 full.  Bake according to cake mix instructions until done.

Cool, frost and decorate the Oreo cupcakes.  Cool the cupcakes completely before frosting.  I used a pastry bag to pipe on frosting.  The girls sprinkled the frosted cupcakes with Oreo cookie crumbs and topped each cupcake with a mini Oreo cookie.  The mini Oreo will soften—so, if you desire a crispy cookie on top of the triple chocolate fudge Oreo cupcakes, wait and add those immediately before serving.
