Jalapeno and Turkey Stuffed Sandwiches

I think I am addicted to pickled jalapenos and vegetables on sandwiches.  I don’t know why I’ve never discovered them before!  I have seen colorful blends of spicy, jalapeno peppers and vegetables on store shelves and in decorative jars on display in restaurants—but, have never eaten them before.  This week, my husband brought some home from a sandwich shop and I was hooked!  I think have eaten them in some form every day this week for lunch!  Today, I thought it would be a fun twist to create an oven baked sub from my new found, favorite ingredients.  I’m also using this as my J entry in the Blogging from A to Z Challenge.


Ingredients for Jalapeno and Turkey Stuffed Sandwiches
1 Small French Bread Loaf
1 Slice of Provolone Cheese
6 Slices of Deli Turkey
3 Tbsp. Pickled Jalapeno/Vegetable Mixture (or more)
Shredded Italian Blend Cheese
Mayonnaise

Instructions for a Jalapeno and Turkey Stuffed Sandwiches.
Prepare the French Bread and preheat the oven.  Hollow out the center, lengthwise, of a small loaf of French Bread to make room for the sandwich filling.  Preheat the oven to 350 degrees, and line a cookie sheet with aluminum foil.

Stuff the sandwich with filling.  Break the slice of provolone cheese into strips and place into the bottom of hollowed bread shell.  Evenly stuff with the turkey and spicy, pickled vegetables.  Sprinkle with shredded cheese.

Bake.  Bake the jalapeno and turkey stuffed sandwich until the cheese is melted and the sandwich is heated through—about 10 minutes.

Serve.  I like to top with mayonnaise, cut into serving pieces and serve with fries.
