1 c. leftover Steak, cut into tiny bite sized pieces. The steak that I used for this recipe was sirloin grilled at home and seasoned simply with McCormick Steakhouse Grinder
1/3 c. Diced Yellow or Red Onion
3/4 c. Sliced Fresh White Mushrooms or Baby Bella Mushrooms
2 Tbsp. Diced Banana Peppers, jarred (or sub in 1/4 c. chopped bell peppers)
2 Handfuls of Fresh Spinach (torn and stems removed)
1/4 c. Parmesan Cheese
1/8 tsp. Ground Black Pepper
1/2 tsp. Garlic Powder
6 Eggs, lightly beaten
1/2 c. Shredded Mozzarella or Italian Blend Cheese
Topping Ideas: Chopped Tomatoes, Scallions, Thinly Sliced Jalapenos, Taco Sauce
Instructions for our Steak & Spinach Breakfast Scramble
Saute the veggies. In a non-stick skillet, heat oil until hot--but, not smoking. Add the onion and saute for a few minutes or until it softens slightly. Add the mushrooms and cook a additional 2-3 minutes. Toss in the banana peppers and the fresh spinach, and the steak and continue to saute until the spinach wilts.
Scramble in the eggs. Beat the eggs, parmesan cheese, pepper, and garlic powder in a small bowl. Pour the egg mixture into the hot pan and scramble into the steak and vegetables until the egg is set through.
Serve. We like to serve with chopped tomatoes and jalapeno peppers along with a side of toast and fruit.
