My girls head back to school in just a couple of days. That means that our mornings will soon become much more hectic with everyone heading out of the house at different times in different directions. I love quick, easy, and healthy breakfasts that we can each tailor to our tastes. This healthy cherry almond Greek yogurt parfait serves up a powerful protein/carb breakfast that is so simple that the girls can prepare them themselves!

Ingredients for our healthy Cherry Almond Greek Yogurt Parfait recipe
1/2 c. Vanilla Greek Yogurt (like Stonyfield Farms French Vanilla) (or Plain Greek Yogurt with 1/2 tsp. Vanilla Extract)
Stevia (Optional)
1/2 c. Quick Cooking Oats
1/4 tsp. Cinnamon
1/2 c. Cherries, pitted and sliced
1 Tbsp. Sliced or Slivered Almonds
Instructions for our healthy Cherry Almond Greek Yogurt Parfait recipe
Blend the Greek Yogurt. I use Stonyfield Organic Vanilla Greek yogurt and find that it doesn't need added vanilla or extra sweetener. If I do use an unsweetened, plain Greek yogurt, I add a little Stevia and 1/2 tsp. vanilla to taste
Toss oats with cinnamon. Simply toss the oats with 1/4 tsp. Cinnamon until the oats are coated with the spice.
Layer the Cherry Almond Greek Yogurt parfaits. I like to use martini glasses or pretty glass bowls for this recipe. Begin with 1/2 the oat/cinnamon mixture, and layer on 1/2 the yogurt, 1/2 Tbsp. almonds, and 1/4 c. of the sliced cherries. Repeat the layers and serve.
The girls love this recipe since they are able to add the ingredients
as they like them—and it’s a nice break for mom on a busy morning to have the
girls make their own meals! Occasionally, my picky eater refuses Greek yogurt--but, this recipe also works equally well with her favorite, light vanilla yogurt.
