Blackened Buffalo Chicken Sandwich Recipe

Many of the recipes you will read on our website begin as one of my husband's ideas.  Oftentimes, he has a unique dinner idea and relies on me to make the flavors work.  Last weekend, as we faced our usual, "what's for dinner", debate--we considered blackened chicken and rice, Buffalo wings, or black 'n Bleu burgers.  How about Blackened Buffalo Chicken Sandwiches?  I have a tried and true blackened spice recipe....and a favorite Buffalo wing recipe--so it was time to combine them into something a little different!

Ingredients for Blackened Buffalo Chicken Sandwiches 

Blackened Spice Mix Ingredients
1 Tbsp. Garlic Powder
1 Tbsp. Paprika
1 Tbsp. Onion Powder
1 Tbsp. Dried Oregano
2 tsp. White Pepper
2 tsp. Black Pepper
2 tsp. Red Pepper (Cayenne)
2 tsp. Dried Thyme
1 tsp. Dried Basil
1 tsp. Sea Salt (Salt is optional—I actually leave out the salt. There are too many flavors to miss it and it helps keep daily sodium intake in check!)  

Parmesan Garlic Buffalo Sauce Ingredients 
1 1/2 c. Frank's RedHot Buffalo Wing Sauce (not the hot sauce—the thicker wing sauce variety)
¼ c. Grated Parmesan Cheese
1 tsp. Garlic Powder
 
4 Boneless Skinless Chicken Breasts, cut into strips
1 c. Bleu Cheese Salad Dressing
Sliced Red Onions, Shredded Lettuce, Sliced Ripe Tomatoes
Crumbled Bleu Cheese (Optional)
4 Large Buns 

Instructions for Blackened Buffalo Chicken Sandwiches
Preheat the Broiler on low--or preheat the grill or a grill pan.   

Mix up the Blackened Spice Mixture.  Add each spice ingredient to a jar with a lid or a small plastic storage container with a lid. Stir to combine—or simply return the lid to the container and shake vigorously!  This makes several servings of this spice mixture--so make it in something you will be able to label and store for future use!

Prepare the Parmesan Garlic Buffalo Sauce.  Combine the hot sauce, Parmesan Cheese and Garlic powder in a small mixing bowl with a whisk.

Broil or Grill the Chicken.  Sprinkle a teaspooon of blackened spice onto both sides of each chicken breast and press it in slightly.  For spicier sandwiches--add  more blackened spice.  Broil or grill the chicken until it is almost cooked through (about 15-18 minutes or so.)  Then, baste the prepared buffalo sauce onto the chicken and turn frequently until the chicken is cooked through.

Build the Blackened Buffalo Chicken Sandwiches.  We toast the buns, spread each top with bleu cheese salad dressing and add the chicken, red onion, lettuce, tomato slices, and bleu cheese crumbles.



These sandwiches are spicy!  We serve Blackened Buffalo Chicken Sandwiches with potato wedges and salad.  If we have leftover chicken--we love to serve these in lunchtime Buffalo Chicken Salads or even as cold sandwiches the next day!
