Holiday Dessert Buffet Idea: Mint Chocolate Twinkie Cake Recipe Idea

Sometimes, I get random requests from brands for recipe projects. A couple of years ago, I worked with Hostess and Twinkie in promoting their most recent Twinkie cookbook.  As part of that project, I was asked to submit a Twinkie inspired recipe--for consideration into their cookbook.  I made the "finals"....but, didn't make the final coveted cut.  That's okay--because this Mint-Chocolate Twinkie Cake made the final cut for my middle daughter's birthday...a New Years party...and PTO meal night...twice.  This year, it is going to be off to two holiday parties--simply because it is easy and turns our quite pretty!  No.  It isn't healthy.  It uses Twinkies as a primary ingredient.  Probably enough said on the "health."  However, everyone that tastes it...Loves it.  AND it only requires a bit of minimal building--no baking! Ingredients for our Mint Chocolate Twinkie Cake Recipe

24 Original Hostess Twinkie Cakes, unwrapped.
1 Package Oreo Cookies (you will have leftover cookies!)
1 Package of Jello Chocolate Fudge Pudding, prepared to package directions.
1 8 oz. Container of Cool Whip Topping
Green Food Coloring (I use McCormick's Green Food Coloring or Lorann Oils)
Mint Extract (I use Watkins Mint Extract)

Instructions for our Mint Chocolate Twinkie Cake Recipe.

Create the Cake's Chocolate "Crust".  Crush 15 or so of the Oreo cookies into a Cookie crumble 'crust' and sprinkle onto a rectangular surface.  Plan on the "crust" being no more than 5 inches wide and the length of two Twinkies long! 

Stack half the Twinkies.  I stack the unwrapped Twinkies in groups of 4 Twinkies--stack three Twinkies high--onto the prepared, Oreo cookie crust.  Keep the Twinkies even and make them touch slightly for better presentation and stability. Layer half of the chocolate pudding over the Twinkies.  Hold off for a few minutes...because you will continue to stack the Twinkies in tight alignment to finish the rectangle once have you add some minted cream in an upcoming step!.

Make the Mint Whipped Topping.  Blend 3-4 Drops of Mint extract and 4-5 drops of green food coloring into the container of whipped topping.  It's that simple to make a sweetened, mint flavored cream!

Build the Mint Chocolate Twinkie Cake.  Spread a light layer of minted, whipped cream over the first layer of the Twinkie cake.   Finish building the Twinkie Cake layers--creating a rectangle from the remaining Twinkies.  Top the top layer with the remaining chocolate pudding and the remaining minted cream. 

Decorate with Oreo Cookie halves and crumbles, if desired.

Enjoy!  This is a fun recipe that makes everyone remember those "carefree" days when every meal didn't need to be healthy.  It's a splurge--so don't feel guilty serving it! ...But...don't serve it everyday!
