Evenings get a little hectic in our little corner of the world with after school activities, homework, and events. Sometimes our schedules leave little room for dinner--let alone a healthy dinner! One-pot meals offer easy preparation and cleanup on some of our busier nights--and they are so easy to make ahead! I found this One-Pot Meal infographic and thought you might find it helpful. Be sure to check out the recipe ideas included as well. I think I will be making the Beef Curry with Spinach and Cauliflower tomorrow night after the girls finish play rehearsal and running club!
