Slow Cooker Chicken Fajitas Recipe

Our days are busy in our little corner of the world.  Some evenings find us at soccer practice until 8 or 9 pm--or a late evening violin lesson following dance class.  I have been a longtime fan of a slow cooker and usually make dinner in the old, faithful slow cooker at least one night a week and sometimes a weekend meal is served from there too if we have had a day trip or an all-day event!  While whipping up Mexican tacos or fajitas really doesn't take that long prepare on the stovetop--sometimes, it is just really nice to walk into the house from the busy day and be greeted by the smells of a warm dinner ready and waiting.  Tonight, I am making slow cooker chicken fajitas.  The meat and peppers and onions will be ready and waiting for fajita wraps or to toss onto a rice bowl or a salad.  What is my go-to recipe for slow cooker chicken fajitas?

Ingredients for slow cooker chicken fajitas
1 1/2 pounds Boneless, Skinless Chicken Breasts cut into 2-3 inch strips
1 Green Bell Pepper, Sliced
1 Red Bell Pepper, Sliced
1 Yellow Onion, Sliced
1 4 oz. Can Green Chilies, Diced
1 c. Chicken Broth
2 tsp. Chili Powder
1 tsp. Cumin
1 tsp. Paprika
1 tsp. Garlic Powder
1/2 tsp. Coriander
1/2 tsp. Ground Black Pepper
1/4 tsp. Cayenne Pepper
Sea Salt  (2-3 Dashes)

Instructions for Slow Cooker Chicken Fajitas

Prepare and preheat a slow cooker.  I generally spray my slow cooker with cooking spray and turn the setting to low while I am preparing the vegetables and meat.

Gather the ingredients.  Slice the chicken and vegetables and measure out the spices.

Add the Chicken Fajita Ingredients to the slow cooker.  Place the slices of chicken in the bottom of the slow cooker.  Layer the vegetables over the chicken.  Pour the broth over the chicken and vegetables. Sprinkle the spices evenly over the chicken and vegetables.  Top with the diced green chilies.  With a pair of tongs or a heavy fork, turn the vegetables a bit to allow the spices to rub onto the chicken below.

Cook the Chicken Fajitas.  Cook on High for 4-6 hours or Low for 6-8 hours.  Shred the chicken breast pieces with two forks. 

Serve the Slow Cooker Chicken Fajitas.  Serve the chicken fajita mixture over warmed flour tortillas or rice or a bowl of mixed salad greens.
