Ingredients for my Mediterranean Inspired
Greek Chickpea Salad Recipe
1 can of Chickpeas, drained (15 oz.)1/4 Red Onion, medium
1/2 can Black Olives, drained & sliced (About 4 oz)
1/2 Red Bell Pepper, seeded and chopped
1/2 Cucumber, small--chopped
1/4 C. Greek Salad Dressing
1 Roma Tomato, seeded and chopped
Salt
1/4 c. Crumbled Feta Cheese (optional)
Instructions for this Mediterranean Inspired
Cut up all of your vegetables. other than the chickpeas, into bite-size pieces and put them into a large mixing bowl. Make sure you drain your chickpeas and black olives!
Add in your Greek Salad Dressing, salt, and cheese if you would like, and toss to stir.
Cover your bowl and let chill for 15 minutes to an hour.
