Mediterranean Inspired Greek Chickpea Salad Recipe

Whenever I am looking for a nutritious meal or side, packed with protein, a simple chickpea salad is always my go-to recipe. Not to mention, it does not include any meat, so it fits right in with a vegetarian lifestyle. This recipe requires no cooking and can be put together within 15 minutes!!

Ingredients for my Mediterranean Inspired 
Greek Chickpea Salad Recipe
1 can of Chickpeas, drained (15 oz.)
1/4 Red Onion, medium
1/2 can Black Olives, drained & sliced (About 4 oz)
1/2 Red Bell Pepper, seeded and chopped
1/2 Cucumber, small--chopped
1/4 C. Greek Salad Dressing
1 Roma Tomato, seeded and chopped
1/4 c. Crumbled Feta Cheese (optional)

Cut up all of your vegetables. other than the chickpeas, into bite-size pieces and put them into a large mixing bowl. Make sure you drain your chickpeas and black olives!

Add in your Greek Salad Dressing, salt, and cheese if you would like, and toss to stir.

Cover your bowl and let chill for 15 minutes to an hour.
