Meatless Monday Lunch: Veggie & Feta Sandwich with Roasted Red Pepper Hummus Recipe Idea

Lunch planning has been a lot like an episode of Guy's Grocery Game for the past few weeks.  I haven't been planning menus and grocery shopping has been a little sporadic with random ingredients out of stock at random times.  Veggie sandwiches filled with my on-hand ingredients have become my go-to lunch on both weekends and weekdays!  I can make two yummy sandwiches with odds and ends of fresh vegetables, a little cheese & fresh bread!  Today, I want to share my current favorite veggie sandwich recipe: a Roasted Red Pepper Hummus & Veggie Sandwich.  Here is my go to recipe for a fresh veggie sandwich with spicy red pepper hummus and feta!

 

Veggie & Feta Sandwiches with Roasted Red Pepper Hummus

 

Roasted Red Pepper Hummus & Veggie Sandwich Ingredients

1/2 c. Roasted Red Pepper Hummus, divided
1/2 c. Feta Cheese, crumbled
2 Tbsp. Mild Banana Pepper Rings
Fresh Spinach--about a handful
Red Onion--two slices, separated into rings
Mushrooms--two large mushrooms, sliced
Cucumber--1/2 of a medium sized cucumber, peeled & sliced
Bell Pepper--1/4 of a large red or yellow pepper, sliced into strips
Red Wine Vinaigrette Salad Dressing for Drizzling
4 Slices Whole Grain or Rye Bread, Toasted 

 

Ingredients for Veggie & Feta Sandwiches with Roasted Red Pepper Hummus

 

Roasted Red Pepper Hummus & Veggie Sandwich Instructions 

 

Build the Roasted Red Pepper Hummus & Veggie Sandwiches. Spread hummus onto each slice of bread and set two slices aside. Layer half of the veggies onto a hummus covered slice of bread. Add feta cheese and drizzle with the Red Wine Vinaigrette. Top with the two hummus coated slices remaining, cut in half and serve. 

 

Serve with Soup or Mixed Fruit.   Sometimes, I pair these sandwiches with leftover vegetable soup or broccoli cheese soup.  Most of the time, I serve with fresh fruit.

What brand of hummus do we use? I love Sabra Roasted Red Pepper Hummus--but, will buy a store brand version of it when that brand isn't available.

Do we make our own red wine vinaigrette? Sometimes, I do make my own red wine vinaigrette--I usually use this red wine vinaigrette recipe from Giada de Laurentiis. If I buy a dressing at the grocery store--I usually opt for Ken's Steakhouse Red Wine Vinegar & Olive Oil.  

Choose other veggies on hand if desired!  We usually add sliced red tomatoes, sliced olives and even some shredded parmesan cheese.  Sometimes, we skip the bell peppers.  This recipe is truly adaptable to your taste and your on-hand veggies.
