I am not a huge oatmeal fan, but the kids and the husband love it and it's a quick and easy breakfast that works great with random add-ins on a busy mornings. This recipe combines the yum of a peanut butter & banana sandwich with a hot oatmeal recipe that is ready in less than five minutes. It's also a GREAT use for slightly over-ripe bananas!
Ingredients for Peanut Butter & Banana Oatmeal
- 1/2 c. Quick Cooking Oats (I like Steel Cut Oats!)
- 1 c. Water or Milk
- 1/2 Large Ripe Banana, Sliced
- 2 Tbsp. Creamy Peanut Butter
- Honey, Stevia or Agave , if desired

***Quick Cooking Oats are easy to prepare either in the microwave or on the stove top. I tend to make oatmeal on the stove because I forget to pay attention to it in the microwave...and it poufs over the bowl and I have a 20-minute mess to clean up!
Stove Top Method..In
a small saucepan, bring the water or milk to a light boil over medium
heat. Add the oats and banana slices. Stir to spread out the banana pieces, reduce heat and cook 2-5 minutes--or until
desired oatmeal consistency is reached. I prefer my oatmeal thick--so, I
almost always cook it for several minutes. Remove the oatmeal from
the stove and quickly stir in the peanut butter while the oats are hot. Spoon into a serving bowl. If you are using unsweetened peanut butter, you may want to add sweetener. I find regular peanut butter and ripe bananas add plenty of sweetness to the oats, so I rarely add any sweetener to this recipe.
Microwave Method. If you are
using the microwave, simply combine the oats, banana slices and water or milk into a
microwave safe bowl, cover with a paper towel, and microwave on high
for 2-3 minutes--or until oatmeal reaches the desired consistency.
Remove the oatmeal from the microwave carefully as the serving bowl will
be hot. Stir in the peanut butter and sweetener, if adding any.
Serve warm!
