Meatless Lunch Recipe Idea: Triple Veggie Tortilla Pizza Stacks

 Why use Tortillas instead of Traditional Pizza Crust?

 

Tortilla "crust" pizzas are an excellent alternative to traditional pizza crust for several reasons. You can easily find tortillas in various sizes at most grocery stores! Mini tortillas, or soft taco-sized tortillas, are fun to use because they fit neatly onto a plate and make great "personal-pizza" sized lunches! Tortillas are great for these pizzas because they crisp up quickly in the oven or toaster oven and create a delightful crunch. Most importantly, however, tortillas allow you to sidestep the heavier nature of pizza dough (which may call for yeast, rising time, and extra preparation) while still delivering that satisfying pizza taste.  

 

And--the kids will love using everyday ingredients in unique ways!

 

Gather Your Ingredients

• Mini tortilla wraps (you'll need three wraps per pizza)

Marinara sauce or pizza sauce (either store-bought or homemade)

• Shredded mozzarella or provolone cheese

• Black olives, sliced

• Red or yellow onion, chopped

• Banana pepper rings, sliced

Instructions for Making Triple Veggie Pizza Stacks

 

Preheat your oven and your baking pan. 

Preheat your oven to 350°F and prepare a nonstick baking sheet or large cookie sheet. I usually cover the baking sheet with a piece of aluminum foil and spray lightly with cooking spray for easy clean-up. 

 

Prepare Your Sauce and Toppings

If you're using store-bought pizza sauce or marinara, you can spoon it right from the jar. If you'd like to make a homemade sauce, you can simmer tomatoes (canned or fresh), Italian seasonings, and garlic for a delightful burst of flavor. Once your sauce is ready, prepare your chopped onion and slice your black olives and banana peppers.

 

Assemble Your Stack

  1. Place a mini tortilla wrap on a prepared baking sheet. Spread a light layer of marinara or pizza sauce on top, leaving some space around the edges to prevent dripping.
  2. Layer with mozzarella cheese, sliced black olives, dice onion and banana pepper rings.
  3. Place a second tortilla wrap on top and repeat: spread on sauce, then cheese, and veggies.
  4. Place a third tortilla wrap on top of the stack. Cover the last tortilla with another layer of sauce, additional cheese, and a few last bits of toppings, as desired.

Bake and Enjoy

Once your Tortilla Pizza Stack is assembled, place the pan into the preheated oven and bake for 8–10 minutes, or until the tortilla edges brown and the cheese is melted!

 

Serve the Tortilla Pizza Stacks

Remove the baked pizza stacks from the oven and let stand on the baking pan for a couple of minutes before slicing. Using a pizza cutter or sharp knife, simply cut each pizza withe pizzas into into triangles or wedges. 

 

I like to serve these mini stacks with a green salad or soup—both work well for either lunch or dinner.
