French Toast Sticks with Blueberry Sauce Recipe

French toast is one of those breakfasts that everyone in our house loves--but, one that I rarely think of making! We have made French Toast Sticks from Banana Bread and Chocolate Drizzled French Toast with the girls too many times to count.  I began making French Toast sticks rather than full slices of French Toast when the girls were little so that breakfast was easier managed by their little hands. 

Most of the time, I still make French Toast sticks--as in this simple recipe for French Toast Sticks with Blueberry Sauce--but, the recipe works equally well for full slices of French Toast, if you prefer.

Ingredients for French Toast Sticks with Blueberry Sauce
Blueberry Sauce Ingredients
1 Pint Fresh Blueberries, washed and patted dry
1/4 c. Stevia or Sugar
1 c. Water

1/4 c. Water
1 tsp. Cornstarch

French Toast Ingredients
2 Eggs
1 c. Milk or Almond Milk
1 tsp. Vanilla
1 tsp. Cinnamon
1 Tbsp. Stevia or Sugar
1/2 tsp. Salt
8 Slices of Bread, sliced into 1 1/2 inch strips or left whole

2 Tbsp. Butter or 1 Tbsp. Coconut Oil

Whipped Topping (Optional)
Butter (Optional)

Instructions for French Toast Sticks with Blueberry Sauce
Prepare the Blueberry Sauce.  Add blueberries, sugar and water to a small saucepan.  Bring to a boil, stirring frequently.  Reduce heat and simmer, stirring occasionally,  until the blueberries break down.  It usually takes about 10 minutes.  If the sauce is too thick, add a little more water.  If it's too thin--combine 1/4 c. water and 1 tsp. cornstarch in a small bowl.  Whisk the cornstarch mixture into the hot blueberry sauce and return to a low simmer for 2-3 minutes, or until sauce thickens.  If it becomes too thick--simply add a little water to reach the desired consistency.

Prepare the French Toast Sticks.  Combine the eggs, milk, vanilla, cinnamon, salt and sugar in a shallow dish.  Heat the butter or oil in a skillet or preheat a griddle.  Dip the bread into the egg mixture, turning to coat on both sides.  Place the bread on the heated griddle or skillet and fry about 4-5 minutes per side--or until the French toast is golden brown.

Top the French Toast Sticks with Blueberry Sauce and Serve.  Ladle blueberry sauce onto each serving, top with whipped cream and butter, if desired.  Serve warm.  This makes 4-6 servings.  My girls will usually eat a slice and a half of the toast or an equivalent in "sticks".
