5 Avocado Recipes to Add to your Meal Plan

Avocados have become a kitchen staple in our little corner of the world over the past few years.  We use them daily--whether in a smoothie or as a breakfast ingredient, a lunch salad add-in, an afternoon snack, or in more traditional meals as a taco or nacho bar topping or in guacamole.  Today, I thought I would share a few of my favorite recipes starring avocado that are perfectly easy to add to your next weekly menu plan!

Baked Eggs in Avocado Cups

 

Eggs and Cheese Baked in Avocado Halves

These easy, baked eggs cook inside seasoned avocado halves--creating a super, simple and healthy breakfast.  I freeze the scooped out spoonfuls of avocado to use later in smoothies! 

While we usually serve these for breakfast--I have recently been topping them with a chunky garden salsa, jalapeno pepper slices and some sour cream to spice them up for brunch or lunch--or even dinner.

Hard Boiled Egg and Avocado Plates

This is one of those 5 minute breakfast or snack ideas--that is perfect for busy mornings or afternoons.  I boil several eggs at the beginning of the week and we simply slice them up along with avocado and Roma tomatoes.  

Serve with the egg warm or chilled and a little salt and pepper.  My husband also tosses on some jalapeno slices or spicy hot sauce.

Bacon, Egg, and Avocado Wraps

These are my go-to, fast food alternatives for busy mornings and early morning roadtrips!  I make these Bacon, Egg and Avocado Wraps and wrap them up in aluminum foil or pack into lunch style storage containers so that the family can take them on the go.   Bacon and Avocado are the perfect combination for breakfast or lunch!

Credit for this avocado themed meal goes to my youngest daughter.  She always makes these breakfast toasts when we have leftover, homemade guacamole! Sometimes, she adds a layer of store bought hummus with some diced tomato to jazz it up a little.   My middle daughter is a pretty picky eater and she always requests these when we have the ingredients on hand!

Fresh Guacamole

We usually make fresh guacamole at least a few times a month.  We use it as a dip with tortilla chips--but, more often as a topping for spicy fish tacos or burgers.  This recipe is also credited to my youngest daughter as she has honed her guacamole skills to a science!  She has made guacamole for school assignments, to share at Spanish class potlucks and for too many cookouts and family gatherings to count!  Her "pro" tip?  Use an old school potato masher!  It works great for avocados that are not quite soft enough!
