Flatbread pizzas have become my teen daughters' favorite go-to lunch. She was making a variety of flatbread pizzas long before they became staples on almost every restaurant menu! The BBQ Chicken Flatbread Pizza recipe that I am sharing today is one of her favorites--and has become an easy dinner that we can toss on the grill in a matter of minutes for an easy weeknight dinner too! Ingredients for BBQ Chicken Flatbread Pizzas
1 c. BBQ Sauce (I use Sweet Baby Ray's Honey Chipotle BBQ Sauce)
1/2 Small Red Onion, Sliced and Chopped
1 c. Grilled BBQ Chicken Breast, Cooked and Chopped
1 c. Shredded Mozzarella Cheese or Monterey Jack Cheese
1/2 c. Sliced Hamburger Style Dill Pickles
1/2 Small Red Onion, Sliced and Chopped

Instructions for BBQ Chicken Flatbread Pizzas
Prepare Oven or BBQ Grill. If baking, preheat oven indoors to 350F. If grilling outside, preheat grill to medium heat. If baking indoors, you will need a large baking sheet to hold two flatbreads.
Need some BBQ Chicken? I usually make these flatbreads with grilled, bbq chicken leftovers (you can get my grilled bbq chicken recipe here!) from the previous night's dinner or from a restaurant. It is easy enough to grill some bbq chicken pieces and then build the flatbreads too! Simply coat some thin, fresh, boneless/skinless chicken breast pieces with our dry bbq spice rub and grill over medium heat for 25 to 30 minutes until internal temperature of the chicken hits 160 degrees.
Prepare the Flatbreads. Brush each flatbread generously with olive oil. Use a pastry brush to spread the oil all the way out to the edges. Add 1/2 cup BBQ Sauce to each flatbread and spread to the edges with a pastry brush. Top each BBQ chicken flatbread with half of the chopped chicken, red onion slivers, cheese, and pickles.
Bake or Grill the Flatbreads. Since all of the ingredients for these flatbread pizzas are cooked--you simply need to heat the bread and chicken through and melt the cheese. I generally bake in the oven for 7-10 minutes or grill for 4-6 minutes, taking care to not burn the bread!
Cut and Serve the Flatbreads. I cut each flatbread into four pieces and generally serve with green salad, coleslaw or pasta salad.
