Pickled Cucumbers & Onions with Lime Recipe

Growing up, my grandparents grew loads of cucumbers in a large vegetable garden.  They canned and froze a variety of pickled cucumbers--but, the dish that I remember most was simply fresh, sliced cucumbers and green onions "pickled" and chilled in a salt water and apple cider vinegar solution.  This past summer, we tried a different version of pickled cucumbers--pickled with fresh lime juice.  After some taste tweaks--these pickled cucumbers and onions are my go-to quick side dish when fresh cucumbers are plentiful. What is my recipe for pickled cucumbers with lime?

Ingredients for Pickled Cucumbers and Onion with Lime
4 Medium Cucumbers, peeled and thinly sliced
1 Medium Yellow Onion, peeled, thinly sliced & separated into rings
1 Heaping Tbsp. Peperoncini, finely minced (I use Mezzetta whole peperoncini)
Juice from 3 Large Limes
1 1/2 tsp. Sea Salt (I use Kirkland Pure Sea Salt)
1 Tbsp. Dried Parsley or 1/4 c. Fresh Parsley, chopped

Instructions for Pickled Cucumbers and Onion with Lime
Combine the ingredients in a medium sized lidded bowl.  Add the sliced cucumbers, onions and peperoncini to a bowl with a tight fitting lid.  I use a 4-cup Pyrex bowl with a lid.  Add the sea salt, parsley, and lime juice.  Put the lid on the bowl and give the ingredients a vigorous shake.  It's easier than trying to get the salt and parsley mixed with a spoon!

Chill and serve.  Place the lidded bowl into the refrigerator for at least an hour before serving to chill.  Give the bowl a good shake a few times while it is chilling to keep the ingredients blended.   We serve as a side dish with spicy chicken dishes, grilled fish and even meatloaf.
