Meatless Monday Recipe Idea: Garden Veggie Burgers with Italian Mayo


No time to plan and prepare your Meatless Monday meal tonight?  Need a quick and easy Meatless Monday recipe idea?  I rarely use convenience foods--but, sometimes my schedule leaves me with more on my to-do list than minutes before dinner!  For this meatless Monday recipe, we picked up a package of Morningstar Farms Garden Veggie Patties and loaded it with our favorite fresh veggies and a quick Italian Mayo spread.  Add a side of oven baked sweet potato fries--and dinner is ready in no time.

Ingredients for Meatless Monday Garden Veggie Burgers with Italian Mayo
4 Morningstar Farms Garden Veggie Patties (These come in packages of four.)
4 Whole Grain Sandwich Buns
4 Tbsp. Shredded Cheddar Cheese
1 Small Red Onion, sliced
Shredded Lettuce
½ c. Black Olives, Chopped or sliced
1 Medium Red tomato, sliced
Banana Pepper Slices or Jalapenos (optional)

Italian Mayo Spread Ingredients
¼ c. Light Mayonnaise
1 tsp. Northern Italian Salad Dressing (I use Ken's Steak House Lite Northern Italian with Basil & Romano )

Instructions for Meatless Monday Garden Veggie Burgers with Italian Mayo
Prepare the Italian Mayo Spread.  Combine the mayo and Italian salad dressing in a small bowl.  Stir or whisk until thoroughly mixed.  Cover and Refrigerate until ready to use.

Prepare the Morningstar Farms Garden Veggie Patties.  Preheat a non-stick grill pan or heavy skillet.  You may wish to spray with cooking spray if food sticks even slightly to the skillet so that the veggie burgers remain intact.  Cook the veggie burger for 4-5 minutes on each side or until internal temperature reaches 160F.  Sprinkle a Tbsp. of shredded cheddar cheese onto each veggie burger.  Cover skillet with a lid and remove from heat to melt the cheese.

Build the Garden Veggie Burgers.  I like to grill the buns before I load the veggies and “burger” onto them.  Simply preheat a grill pan and place the buns cut side down and heat until the buns brown slightly.  Place a veggie burger onto each grilled bun, load with desired vegetables from the list above and spread each top with Italian Mayo.

We serve these with oven baked sweet potato fries.
